I incorporate angst into characters by simply having them act in a way in relation to events that I feel that character would act if they where real. Of course sometimes I am heavily into the mindset of the character and their angst is also influenced by how I would feel about some things happening to them or have had happen to them.
I suppose it is usually a combination of the two.
