Online creation tools (OLC) will do that (some are more menu based). Have you tried Circle or ROM?

For the CoffeeMud issue, it sounds like you just don't have Java. What happens if you just type java -version or something like that? If it says command not recognized or whatever then you need to download the Java runtime (or the JDK if you want to write and compile Java I guess).
